Feta Pasta Salad

Ingredients:

  • 500g packet spiral pasta, cooked and cooled
  • 2 Lebanese cucumbers, diced
  • 1 red capsicum, diced
  • 8 spring onions, thinly sliced
  • 250g cherry tomatoes, halved
  • 1/2 cup pitted kalamata olives
  • 1/2 cup roughly chopped parsley
  • 200g feta

 

Dressing:

  • 2 cloves garlic, finely chopped
  • 6 anchovy fillets, finely chopped (optional)
  • 1 tbsp Dijon mustard
  • 60ml white wine vinegar
  • 80ml Bertolli Extra Virgin Olive Oil
  • Sea salt and freshly cracked black pepper

Directions Icon DIRECTIONS

  • To make dressing whisk together all ingredients.
  • Combine cooked and cooled pasta, cucumber, capsicum, spring onion, cherry tomatoes, olives and parsley. Pour over the dressing and toss to combine.
  • Transfer to a large serving bowl and crumble over the feta to serve.
